Cardiff’s new dining hotspot Nomad opens this June with a dynamic menu and vibrant atmosphere

Nomad will be taking over the previous Terra Mare premises in the Castle Quarter.

Fresh ingredients, an everchanging menu and two-for-one cocktails, what more do you want from a restaurant? A new restaurant will soon be popping up in Cardiff’s city centre, and it will be opening it’s doors to patrons on Friday, June 27.

In just a couple of days, the minds behind the iconic Cardiff food and drink establishments Matsudai Ramen, Penny, Thomas, Poca and Nook will be launching Nomad (not to be confused with Swansea’s Nomad Bar and Kitchen), in the Castle Quarter in the centre of Cardiff.

Whether you fancy a cocktail and a nibble, or sharing hand-rolled pasta and flatbreads with friends, the venue is designed to adapt to the pace of its guests.

The menu, which changes monthly, features seasonal small plates, all prioritising taste over formality. Offerings include white and brown crab Caesar with anchovy and bottarga, dino beef short ribs with hazelnut and horseradish, and a hefty 650g dry-aged pork chop with cider and mustard jus.

They also offer flatbreads adorned with Severn & Wye smoked salmon and horseradish, or heritage tomatoes, burrata and pistachio pesto.

Lighter options range from Atlantic Edge oysters with Bloody Mary dressing to beetroot tartare and smoked fish pâté with pickled mussels – perfect for snacking alongside a beverage.

The venue has undergone a transformation to achieve what the team terms a “lux-modern canteen” aesthetic. The design has been thoughtfully arranged to cater to individual diners, couples, and larger parties alike, making it an adaptable choice for any social event.

Lali Souto heads up the kitchen, bringing his expertise from Matsudai Ramen, Poca and Nook, where he earned a name for himself with his precise, flavour-focused cooking with a global twist.

Head Chef Lali Souto remarked: “Nomad’s a friendly, energetic and flavour-first space – somewhere you can eat and drink as much or as little as you like.

“Whether you’re in for a cocktail, a bowl of pasta, or just passing through, we want people to feel welcome whatever the occasion. We’re cooking food people come back for – whether it’s simple, shareable, or something unexpected.”

Kim Barritt, who is known for their past work with Penny & Thomas, is at the helm of the floor and beverage programme, ensuring top-notch service and a curated drinks list. Patrons can look forward to standout cocktails, an array of quality wines available by the glass and on tap beer, all while the bar maintains its status as a hub for those looking to enjoy a drink and a bite in a laid-back setting without the need for a full dining reservation.

Their grand opening will be held on Friday, June 27 and to celebrate the occasion they are offering guests a special promotion. For the initial fortnight those heading to the venue can expect a generous 25% off their entire bill.

Nomad will also be offering a happy hour from 5-6pm Wednesday to Saturday, promising two-for-one deals on select cocktails, beers, and wines. However, the deals don’t stop there as they are also enticing foodies with unlimited flatbreads from 9-10pm on these days.
